Boka saul or ‘mud rice’ is one of the most well-loved rice varieties in Assam, and its most unique feature is that it requires absolutely no cooking. You can soak it in hot water for about 15 mins or in cold water for an hour, and it is ready. Traditionally this is eaten with a little bit of curd, jaggery, and banana. Assam soft rice which is also known as the 'Kumol Saul' or 'Boka Saul' in local dialect, has been granted with the GI tag and the same has been announced by the Intellectual Property India (IPI) website.
